
Crispy baked potatoes from the oven

Ingredients
– 1kg Firm cooking potatoes (Taste & Colour – Colour Mix)
– 100ml Goose fat or olive oil
– 2 tbsp Flour or polenta
– 3 tbsp Mayonnaise
– 1 tbsp Green mustard (or other of your choice)
Preparation
Preheat the oven to 225°C and place a roasting pan on the rack to get hot.
Peel the potatoes, cut into equal pieces and boil in lightly salted water for 4 minutes. Drain and leave to drain well.
Heat the goose fat or oil in the roasting pan. In a large bowl, toss the potatoes with flour (or polenta) until coated.
Place them in a single layer in the hot roasting pan and roast in the oven for 45-50 minutes, until crispy on the outside and soft on the inside. Stir halfway through.
Drain on kitchen paper and serve hot, with a green mustard mayonnaise (3 tbsp mayonnaise + 1 tbsp green mustard) or of course another sauce to taste!
