
Kale mash with cashew nuts

Ingredients
– 1.5kg Floury potatoes, peeled and cut into pieces (Special Purpose – Stamppot aardappelen)
– 1 Spicy smoked sausage
– 75g Unsalted cashew nuts, coarsely chopped
– 1 Onion, chopped
– 1.5 tbsp Liquid margarine
– 600g Ready-to-use kale
– 2.5 tbsp Mild curry paste
– 1 dl. Herb or vegetable stock
Preparation
Roast the cashew nuts in a dry frying pan until light brown and let them cool on kitchen paper.
Boil the potatoes in salted water for 20-25 minutes until done.
Heat the margarine in a large pan and fry the onion for 5 minutes.
Add the kale, 1.5 dl water, curry paste and salt to taste. Boil the kale for approx. 15 minutes until just done. Heat the sausage according to the instructions on the packaging.
Drain the potatoes and mash them with the kale and the cooking liquid into a creamy mash. Add extra stock if necessary.
Sprinkle the cashew nuts over the mash and serve with the spicy smoked sausage.
