
Kumpir – The Turkish version of the baked potato

Ingredients
– 1 Whole big potato (Special Purpose – Grillers)
– 20g Turkish Kasar cheese (Turkish shop)
– 1 Knob of butter
– 1 tsp Coarse sea salt
– 1 Sausage (hot dog or BBQ sausage)
– 1ml Gherkins
– 4 tbsp Peas (jar or tin)
– 3 tbsp Corn
– 1 tbsp Mayonnaise
– 1 tbsp Vegetable oil
– Other sauces as topping (e.g. ketchup or garlic sauce)
Preparation
Preheat the oven to 200 °C.** Rub the washed potato(es) with a little oil and salt. Prick them and wrap them in aluminium foil. Bake or grill them for approx. 1.5 hours. Test the doneness by poking the potato with a fork.
Grate the cheese and place on a plate. Cut the gherkins into cubes and add to the plate.
Rinse the corn and add it. Rinse the peas, let them dry and mix with mayonnaise in a bowl. Cut the sausage into pieces. Is the sausage raw? Bake briefly and let it cool.
Remove the potato from the oven, open the foil and cut into the top, without cutting all the way through. Press the cut open with a knife and fork, mash the crumbs loose up to the skin and mix with a knob of butter and the grated cheese.
Fill the potato with peas, corn, gherkins and sausage. Choose a sauce to taste.
