
Potato Omelet (Tortilla)

Ingredients
– 4 Firm cooking potatoes (Basic Potatoes – Vastkokend)
– 2 Onions
– 2 Cloves of garlic
– 4 tbsp Olive oil
– 1 tsp Paprika powder
– 6 Eggs
– 0.5 dl Milk
– 75g Grated mature cheese
– Salt and pepper
– 1 Bunch of parsley
preparation
Peel and wash the potatoes and cut into 1 cm cubes. Peel and chop the onion and garlic.
Heat 2 tbsp oil in a frying pan and stir-fry the potato with the onion and garlic for 5 minutes. Reduce the heat and fry for another 10 minutes until the potato is cooked. Add the paprika powder.
Beat the eggs with the milk, salt and pepper. Add the rest of the oil and mix the eggs and cheese into the potato mixture.
Cover and fry the omelette for 10 minutes on low heat until the bottom is lightly browned.
Slide the tortilla onto a plate and cut into squares.
Garnish with parsley.
