Potatoes with asparagus, Flemish style

800g Small, firm cooking or waxy potatoes (Special Purpose – Asperge Lover)

1 Bunch of parsley

12 Thick white asparagus

4 Eggs

8 Slices of (leg) ham

200g Butter

Salt and pepper

Bereiding

Wash and scrub the potatoes. Halve the largest potatoes. Peel the asparagus and cut into 3 cm pieces. Boil the potatoes and asparagus separately until done (potatoes can also be cooked in the steam oven or microwave).

Melt the butter on low heat and season with salt, pepper and finely chopped parsley. Boil the eggs for 4-5 minutes, peel and chop them into pieces.

Serve the eggs over the potatoes, asparagus and 2 slices of ham per person. Pour the butter over it and season with salt and pepper.

If you prefer not to eat meat, simply leave out the ham.
