
Patatas Bravas

Ingredients
– 900g Firm Cooking Potatoes ( Basic Potatoes – Vastkokend)
– 1 Small onion
– Olive oil
– 2 Cloves garlic
– Pinch sugar
– 2 Tomatoes
– 1 tbsp tomato puree
– 2 tbsp Paprika powder
– Pinch chili powder
– Handful parsley, finely chopped
Preparation
Chop the onion, finely chop the garlic and dice the tomato. Set aside.
Heat 3 tbsp olive oil in a pan and fry the onion for 5 minutes until soft. Add the garlic, tomato, tomato puree, chilli powder, sugar and salt. Simmer gently on a low heat for 10 minutes until the sauce thickens.
Preheat the oven to 200°C.
Cut the potatoes into cubes and pat dry. Spread them on a baking tray lined with baking paper. Drizzle with olive oil, sprinkle with paprika and toss well.
Roast in the oven for 40-50 minutes until crispy and golden brown. Serve in a bowl with cocktail sticks, spoon the warm sauce over and garnish with parsley.
