
Potato leek soup with bacon pieces
Preparation time
20-30 minutes
Ingredients
– 800g Floury potatoes (Basic Potatoes – Kruimig kokend)
– 5 Leeks
– 2 tbsp Olive oil
– 3 Meat or chicken stock cubes
– 1.5l Water
– 150g Bacon cubes
– 200ml Crème fraîche
– 25g Chives
– Freshly ground pepper
Preparation
Peel the potatoes and cut them into cubes. Wash the leeks and cut them into rings.
Heat the oil in a soup pan and fry the potato and leek for 5 minutes on a low heat. Add the water and the stock cubes and bring everything to the boil. Let it simmer gently for 15 minutes.
In the meantime, fry the bacon cubes in a dry frying pan until crispy and let them drain on kitchen paper. Remove the soup from the heat and puree it with a hand blender or food processor until smooth. Stir in the crème fraîche and season with freshly ground pepper.
Pour the soup into bowls and sprinkle with the crispy bacon and some finely chopped chives.
