
Purple potato salad with chicken

Ingredients

– 500g Truffle potatoes (Taste & Colour – Deep purple)
– 250g Smoked chicken
– Bunch of grapes
– 1 Lemon
– 4 tbsp Olive oil
– 200g Crème fraîche
– Bunch of dill
– Salt and pepper
Bereiding
Squeeze the lemon and stir it into the crème fraîche together with the olive oil. Cut the chicken into cubes, finely chop the dill and halve the grapes.
Boil the potatoes in salted water for 20 minutes, drain and let them cool. Cut the potatoes into cubes and mix with the other ingredients. Add salt and pepper to taste.
